- Soul food can be synonymous with comfort food, any food that is good for the soul by virtue of reminding us of home cooking. Most often, however, it is an informal, generally accepted term for African-American cuisine developed largely in the southern United States. The foods used are of African origin, and Africans had already begun to incorporate foreign foods into their diets, obtained through Arab and European trade, as slaves strove to recreate dishes from their home countries, often substituting foods. The new mixed cuisine also used and amalgamated foods borrowed from other cultures, particularly American Indians and, to a lesser extent, the Spanish, and new foods that were part of white immigrant culture.
