What does «coquina» mean in Spanish?
- Small clam, with a diameter of 5 cm, belonging to the order Veneroida. It has a thin, oval and depressed shell, very common in the mud of marshes, brackish areas and beach areas on the Iberian coasts. Captured by the coquineros (during low tide they capture this mollusk that are usually buried at shallow depths), it is highly appreciated in gastronomy.
