What does «canchada» mean in Spanish?
- It is applied to yerba mate destined for the first coarse grinding, where pieces of approximately 1 cm square are obtained. In this way it is easier to bag and transport. This process starts within 24 hours after the yerba is harvested to avoid fermentation. Nowadays it is a mechanized process (the canchadora machine), but in the past the yerba was spread out on a flat surface ("canchas") with burlap bags on top, which were beaten with wooden machetes by the canchadores to crush it. The canchada yerba canchada is then naturally stored for 6 to 24 months, or 30 to 60 days in controlled atmospheres, and finally ground again to be marketed.
