- Chestnuts that have been dried in the smoke of the embers and can thus be stored for a whole year. This process also allows the chestnut skin to be extracted more easily. It has a rough texture, and an ivory to yellowish color. The pilonga chestnut is also known as dehydrated chestnut or dried chestnut.
