- The process of breaking or splitting a complex carbohydrate such as starch or cellulose into its monosaccharide or disaccharide components. In this process a polysaccharide is transformed into a fermentable sugar. In the case of beer brewing, this transformation of starch is the result of the action of the enzyme diastase, which is extracted from the malt obtained by artificial germination of barley grains.
